Are these Xformers good for anything?

1V at pri. = 5.8V at sec.

Don't forget thet transformers have no real impedance of their own, just reflected impedance. So long as you are close to the intended impedance they sould operate ok....

Maybe the 7k:10k one would make a nice varimu input transformer? I would try it on PRR´s vari mu input, but a Pultec intertage, as CJ suggested is not bad...
