As a total newbie I need direction to the correct transformer to buy for this psu:

depends on what voltages you need. What are the specifications of the channel strips?

The two channel strips require +18v, -18v, 12v for a relay and an LED, and 48v for phantom. Cyril Jones of Raindirk suggests that I tap-off the 12v using a zener diode.

You have all the information to work it out for yourself Terry. After all it is DIY. Look up the regulator chips you are using and work out how much voltage you need above the rail voltage (18v). You have said 1 amp is enough current (seems high to me).
